My name is Camelia Rodriguez Camara and I am a Filipina American pastry chef based in the Chicagoland area. Through my small business Camelia Bakes, I aim to bring visibility to the Filipino culture and our cuisine. I make desserts primarily using popular Filipino flavors such as ube, pandan, mango, and calamansi — flavors that I grew up eating and loving. I would hope that people recognize the genuine pride I have in being a Filipina American and that I tried showcasing the beauty and uniqueness of Filipino cuisine to the best of my abilities. I offer custom cakes for any special occasion and other popular desserts I offer are macarons, crinkle cookies, and alfajores cookies. I’m also the creator of the Ooey Gooey Ube Cake, which is my best-selling dessert for special orders and at pop-up events.

We're known for our Salted Egg flavored wings and our Buldak Gochujang flavor. We offer a variety of delicious wing flavors such as Original Buffalo, Mango Sriracha, Asian Cajun, Carolina Gold, Lemon Pepper, Honey Thai Chili, and Soy Garlic. Started in 2018, and established our first brick and mortar in 2023. We arrive to bring our customers the best quality food, made with fresh ingredients and served with love.

In Hawaii, even the corner store food hits: Musubi and bento boxes stacked and steaming. That’s what Chef Julius Tacadena wanted to bring to Chicago. But Julius didn’t come up in the kitchen. He started in nursing, moved into recruiting, yet food was always the thing that made sense. With his brother, he launched Krackish Snack Co., and still kept cooking. What started as a pop-up across Chicago led Julius to meet Francis Almeda, a serial entrepreneur turned collaborator. Eventually, they opened Kanin’s first brick-and-mortar spot right next door to Side Practice Coffee. But Kanin isn’t just about rice and bodega snacks. It’s a place that reminds you of home— wherever it is, whomever it is. EVERYBODY EATS.
